I've never eaten fajitas (I'd like to, however), but if I'm not mistaken, they share some similarities with tacos on the mess factor.
So for anyone that hates eating tacos that break, I have a life hack for you. Get normal tacos and soft (wrap style) tacos. Use a sticky sauce (I use liquid nacho cheese or sour cream, or melted cheese in a pinch) to turn the soft taco into an outer layer. Fill as normal (and keep in mind that you probably don't need extra of whatever you used to stick the layers together.)
Thanks to the protective outer layer, breakage isn't a problem, although I can't promise that filling won't fall out of the ends.
