Easy recipes
Hi, I was wondering if somebody could suggest some healthy recipes for meals which are quick and easy to prepare/make? The idea of cooking for myself honestly scares me, but I want to get better at it.

Get a basic cookery book and look up food you like.

I grew up cooking, following mothers instruction, stir this, peel the potatoes and just have a go.
When we got married in 1970 we got from somewhere a Margarete Patten Book, it goes into simple detail, and I still use it but nowadays it may be out of date because it was pre micro wave cookery. Alongside it we had the Dairy Book of Home Cookery, sold by Milkmen and just had a 50 year new edition published which I bought my wife this month as a fun gift when I was checking the offers, from the milkman we have gone back to having, so we do not have to go out for basic supplies, if we are not able to anytime.

Honey and mustard chicken with pasta
300G Farfalle or other pasta
3tbsp reduced fat mayo( full if you prefer)
1 heaped tsp wholegrain mustard
1 tsp clear honey
300g chicken (cut into rough pieces)
1tbsp oil
4 spring onions thinly sliced
4 tomatoes,quartered and then each chunk halved
Small bunch basil,leaves roughly torn
Heat oil in frying pan and add chicken and cook
Boil pasta, cool under running water
Mix mayo/mustard/honey in a large bowl and loosen
with a little water to make a dressing the consistency
of double cream.
Add the chicken/pasta/onions/basil and tomatoes,season
to taste ,gently mix together.
Spanish rice and prawn pot
1 red and 1 green pepper, deseeded and sliced
50g chorizo, sliced
2 garlic cloves, crushed
1 tbsp olive oil
250g easy cook basmati rice (we used Tilda)
400g can chopped tomatoes
200g raw, peeled prawns, defrosted if frozen
Boil the kettle. In a non-stick frying or shallow pan with a lid, fry the onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins. Stir in the rice and chopped tomatoes with 500ml boiling water, cover, then cook over a high heat for 12 mins.
Uncover, then stir – the rice should be almost tender. Stir in the prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.

Thanks for the replies. Those recipes sound tasty, I'll have to try them!
